Born in Brunei, and moving to Sydney, Australia when he was 6. Victor grew up in multicultural Sydney – graduating with a Bachelor of Business Management degree in 2006.

Immediately starting his apprenticeship with Harunobu Inukai learning Japanese – French cuisine at (1 hat) Galileo Restaurant at the Observatory Hotel, he later joined the small team at esteemed modern european fine diner (3 hat) Marque Restaurant in 2008 under chef Mark Best. Towards the end of 2011 Liong joined celebrated chef Dan Hong’s Asian Fusion eatery (1 hat) Ms G’s team and later opened Cantonese behemoth Mr Wong with Jowett Yu, winning restaurant of the year and 2 hats the same year.

In 2013 Liong relocated to Melbourne to open Lee Ho Fook, opening in Collingwood’s Smith Street – relocating to Duckboard Place in 2015 and earning its first hat in 2017. Lee Ho Fook Duckboard Place earned its second hat in 2022.

The opportunity to open a second Lee Ho Fook at Marvel Stadium in 2019. bringing modern Chinese food to a new audience.

In late 2023, Liong launched Quenino by Victor Liong and Cafe Quenino at the Artyzen Hotel in Singapore, designing all aspects of the hotel’s culinary offering. 2024 has seen Liong open quick service restaurant concept SilkSpoon in the legal precinct of Melbourne CBD and Bossa Nova Sushi in the theatre district of Bourke Street.
