For Shaun cooking has been a huge passion of his since he was young, he has always wanted to cook from an early age starting with making a tray of toast and marmalade and taking it on a tray to his mum.
For over 25 years, Logan Brown Restaurant and Bar has been producing spectacular cuisine and Executive Chef and Partner Shaun Clouston has been the man behind the meal for much of this time. Clouston started working at Logan Brown in the late nineties and after a brief stint in Australia returned to become head chef and eventually a partner in the iconic Wellington restaurant. He is also Executive Chef of Bellamys by Logan Brown located in the New Zealand Parliament buildings.
Much can be said for Clouston’s dedication to classic, yet skillfully executed dishes. It is this attention to detail that produces consistently high-quality dishes – with proof found in the numerous awards Logan Brown has earned. In 2009, the restaurant won Cuisine Magazine’s coveted Supreme Winner, Restaurant of the Year and has been awarded Two Hats in the Cuisine Magazine Good Food Guide for three years in a row.
Shaun’s philosophy on food and cooking is to serve the taste and flavours of New Zealand using the best local and seasonal ingredients. Paramount to all of this is the use of ethical and environmentally friendly producers and suppliers. Shaun’s vision is for everyone to be as proud as he is about New Zealand’s environment, the land and seas bounty, and the amazing people who harvest or produce from it. Shaun has carried this philosophy through to the popular Grill Meats Beer Restaurant opened in 2014 which It can be summed up in one line: “Share the Love of Our Craft, Culture & Country”.
