After graduating from Nagoya Culinary Institute, Yoshishige worked at Auberge de Liliane in Kani City, Gifu Prefecture.  He studied under Noboru Katsumata at Auberge Au Mirador in Hakone, Kanagawa Prefecture, which is known to be the first auberge in Japan.  After gaining further experience in Basque Country, France, Yoshishige returned to Japan and worked as a Chef at French restaurants in Nagoya. In 2013, he opened Restaurant Cheval Blanc in Kasugai, Aichi.

Selected as one of the 100 best gourmet restaurants by Gault et Millau, Cheval Blanc also holds One Michelin Star.  Yoshishige is now Vice-Chairman for Le Club de Cuisine Française in Nagoya.
